Winemaking

Small batches. Gentle hands.

From small buckets to French oak, every step is chosen to protect the fruit.

From vine to bottle

The process

01

Hand picked

Grapes are picked into small buckets to avoid bruising the berries and to select only the best fruit.

02

Open vats

Fermented in 500kg open vats and hand plunged.

03

Basket pressed

Basket pressed, then matured in French oak (25% new).

04

Racked, not filtered

Racked 2 to 3 times during maturation, lightly fined but not filtered.

Our belief

Our vineyard goes beyond mere organic principles as our objective is sustainability: sustainability of the soil and the environment. We believe the results are reflected in our wine.

Given the natural balance and flavours these wines are attractive when young. Whilst they will benefit from cellaring, high quality wine should be attractive at any age.
